I used pork shoulder, buto buto cut, but any bonny pork part can
be used.
Used a lot of red tomatoes for acidity
Boiled saba banana for sweetness and sauce thickening.
Canned baked pork and beans for sweetness and sauce thickening
also.
Canned cooked garbanzos for that distinct pochero flavor.
Paprika substitute flavor for chorizo.
1 kilo pork shoulder buto-buto cut, or any pork bones cut
1 small bundle string beans, cut into 2” lengths
1 small bundle, winged beans, cut diagonally
1/2 head, small napa cabbage, trimmed
1 stalk leeks, sliced
1-2 long green chilies
1 small can cooked garbanzos
1 small can baked beans
2-3 medium size potato, cut into wedges
1 medium size carrot, cut into wedges
3-4 boiled semi ripe saba banana, diagonally cut into slices
1/2 head garlic, chopped
2 medium size onions, chopped
6-8 medium size tomatoes, chopped, large chunks
1/2 tbsp. powdered black pepper
1/2 - 1 tbsp. paprika
2-3 bay leaves
1/3 cup fish sauce
1/2 cup tomato sauce
salt to taste
