CHICKEN AFRITADA KARINDERIA STYLE │ Paano Magluto ng Afritadang Manok
This simple saucy Chicken Afritada is cooked Carinderia Style, uses minimal ingredients, with Banana Ketchup for that Pinoy Ketchup sweetness and also gives the dish a nuclear red color.
This Chicken Afritada is more on the saucy sides, perfect for rice toppings.
Most Afritada Recipes include green peas for added color, but I have chosen it as an option, for the reason that it shorten the shelf life of the dish,”madaling mapanis”.
To make the saucy thick I used 2 slices of loaf bread instead of the usual cornstarch.
Ingredients:
1 kilo chicken thigh or legs, cur into serving pieces
2-3 medium size potatoes, cut into wedges
1 medium size carrot, cut into wedges
1 medium size red bell pepper, cut into triangles
1 small can green peas, drained, optional
2-3 tbsp. tomato paste
1/3 cup tomato sauce
1/3 cup banana ketchup
2 medium size onions, chopped
1/2 head garlic, chopped
1/2 tbsp. cracked black peppercorns
2-3 pieces bay leaves
1/2 tbsp. paprika
1/3 cup fish sauce
2 slices loaf breads, trimmed, soaked in water, mashed
sugar to taste
salt to taste
chicken oil or cooking oil
green or red chilies, optional
kinchay for garnish
