Pork Binagoongan sa Gata Dish

Our Pork Binagoongan sa Gata recipe is basically similar to our Binagoongan Recipes that we have already posted here at OPC. The only difference is of course the addition of coconut cream and using more chilies for added kick. Gata dishes are best cooked with extra hotness.


Pork Binagoongan sa Gata Recipe

Here is the recipe of my Pork Binagoongan sa Gata.



Ingredients: 

1 kilo pork liempo or any other part, cut into big cubes 
1/2 cup bagoong alamang, cooked unsweetened 
1 large size onion, peeled, coarsely chopped 
2 large size tomato, coarsely chopped 
1/2 head garlic, peeled, crushed, chopped 
1 thumb size ginger, skinned, cut into thin strips 
3 pcs. bay leaf 
2-3 green/red chili, sliced crosswise 
1/2 tsp. crushed pepper corns 
1/4 cup vinegar 
1/2 cup coconut cream (kakang gata) 
cooking oil 


Cooking procedure: 

Pork Binagoongan sa Gata Cooking Procedure

Wash pork thoroughly put in a sauce pan add 3 cups of water, vinegar, bay leaf and pepper bring to a boil and simmer for 20-30 minutes or until tender and start to render oil. Remove scum that rises add more water as necessary. Continue to stir fry pork until color turn to light brown and start to sizzle, set aside. In the same pan,ginger, sauté garlic, onion and tomatoes for a few minutes until soft and wilted. Add the pork, bagoong alamang, chilies and coconut cream. Continue to cook for another 3-5 minutes or until most of the liquid has evaporated ant the sauce has turn into an oily sauce, stirring occasionally until done . Serve hot with a lot of rice.
