Ukoy na Dulong. Today I was lucky to find some fresh dulong in the supermarket, without hesitations I bought 1/2 kilo, even though I have no idea of what to cook out of it. I was initially thinking to cook the dulong, wrap with banana leave pinais style but I did not have any, I use up all the banana leaves on my Pinaputok na Tahong.

Here is the recipe of my Ukoy na Dulong, enjoy.

Ingredients:

Dulong

1/2 kilo fresh dulong, wash, drained
1 small size onion, peeled, chopped
1 small bundle, spring onion, trimmed, chopped
1 cup, all-purpose flour
2 eggs, beaten
salt and pepper
cooking oil

Cooking procedure:

In a big bowl, beat the eggs, then add in the all-purpose flour dissolve in 1 cup of water, then mix thoroughly, then mix in the fresh dulong. Add in the spring onion and chopped onion and mix thoroughly. Season with salt and pepper to taste. I a large frying pan or wok heat 2 to 3 cups of cooking oil on hi-heat until it starts to smoke. Now scoop out a manageable quantity and pour over into the now hot oil and fry for 3 to 4 then turn over the ukoy and fry for another 2 to 3 minutes and keep aside. Fry the remaining ukoy mix. Serve with a lot of rice and chili garlic dip sauce.
