Special Pansit Lomi Sotanghon Gisado. Pansit or Pinoy Noodles are usually served when there’s a family celebration in most Pinoy homes. Pansit comes in many forms, types and cooking technique or versions. In a way we at Overseas Pinoy Cooking is celebrating a milestone, Overseas Pinoy Cooking officially migrated from overseaspinoycooking.net to overseaspinoy.com. Now let me share to you our symbolic pansit celebration dish for this new chapter of OPC. Here is the recipe of my Special Pansit Lomi Sotanghon Gisado.
Ingredients:
1 500g pack thick fresh thick Hokien noodles, blanch
1 200g pack sotanghon noodles, soaked in warm water
1 cup pork belly, boiled, cut into strips
1 cup chicken liver, fried cut into pieces
1 cup chicken, boiled, cut into strips
1 cup shrimp, trimmed shelled
1 small bunch, snow peas, trimmed
1 small bunch, green beans, trimmed, slice diagonally
1 small carrot, skinned, cut into thin strips
1/4 small cabbage, shredded
1/2 head, garlic, peeled, crushed, chopped
1 medium size onion, peeled, chopped
1-2 tsp. ground peppercorn
2-3 tbsp. parsley flakes
1/4 cup fish sauce
1/4 cup dark soy sauce
1/2 cup oyster sauce
salt
cooking oil
Cooking procedure:
In a wok or large frying pan, heat generous amount of cooking oil. Stir cook the garlic and onion until fragrant. Add in the pork and chicken, continue to stir cook for 2 to 3 minutes. Then add in the fish sauce and soy sauce, continue to stir cook for another 2 to 3 minutes. Add in the ground peppercorns, parsley flakes, the shrimp and oyster sauce, continue to stir cook for another 1 to 2 minutes. Add in 2 1/2 to 3 cups of water, bring to a boil and simmer for 2 to 3 minutes. Add in the carrots, green beans, miki and sotanghon noodles, stir cook for 8 to 10 minutes or until the noodles are just cook, the sauce should be thickened by now then add in the snow peas, cabbage and fried chicken liver, continue to stir cook for another 2 to 3 minutes, correct saltiness if required. Serve hot with kalamansi or lemon.
