Snapper Fillet Pinoy Escabeche Style. I am still having some of the snapper fillet that I used on my Fried Snapper Pinoy Bistek Style. Today I pan fry and cooked them Pinoy escabeche style. Fish escabeche Pinoy style is simplier version of Sweet and Sour dish. It requires few ingredients. It is tasty sweet, salty and gingery.

Snapper Fillet Pinoy Escabeche Style Dish

The fish is first fried either crispy or just pan fried. The escabeche sauce is prepared separately. The escabeche sauce is either poured over the fried fish or the fish is quicky simmered with the sauce for the flavors to be infused with the fish. As long as you have a good balance of sweetness and saltines of the escabeche sauce, you will never go wrong.

Snapper Fillet Pinoy Escabeche Style Recipe

Here is the recipe of my Snapper Fillet Pinoy Escabeche Style. Try it!

Ingredients:

3-4 red snapper fillet
1 small red bell pepper, deseeded, cut into thin strips
1/2 small carrot, skinned, cut into thin strips
1 small stalk celery, cut into thin strips
2 - 3 stalks spring onions, cut into thin strips
2-3 thumb size ginger, skinned, cut into thin strips
2-3 cloves garlic, peeled, crushed, chopped
1/2 small onion, peeled, sliced thinly
3 tbsp. brown sugar
1/4 cup soy sauce
1 tbsp. fish sauce
1 tbsp. vinegar
2 tbsp. cornstarch
salt
cooking oil

Cooking procedure:

Snapper Fillet Pinoy Escabeche Style - Frying

Wash snapper fillet and drain dry. Season with salt. Fry fish in a large frying pan until golden brown and crisp on all sides. Drain on paper towels. Keep aside. In a sauce pan quickly sauté the garlic, ginger and onions. Add in add in the soy sauce, vinegar, sugar and about 1 1/2 cups of water let boil and simmer for 1 to 2 minutes, do not stir.

Snapper Fillet Pinoy Escabeche Style - Cooking Procedure

Thicken sauce with cornstarch dissolve in 1/4 cup of water. Correct seasoning with salt and sugar. Add in the rest of vegetables and the fried fish. Cook for another minute. In a big platter arrange the fried snapper and pour sauce over the fried fish. Serve immediately.
