Pork Adobo with Coca Cola is not your regular adobo. I am not even sure if it should be called adobo at all. Our Pork Adobo with Coca Cola is made up of pork belly with rib bones braised with vinegar, some tomato paste and coca cola beverage drink.

We Pinoy have always been using carbonated drink in some of our dishes. We use carbonated drinks on our cooking for the reasons that they are sweet and good substitute for sugar. The carbonated drinks also help tenderize the meat used in the dish.

Pork Adobo with Coca Cola Recipe

Here is the recipe of my Pork Adobo with Coca Cola.

Ingredients:

I/2 kilo pork belly bone in, cut into serving pieces
1 can cup coca cola
1 head garlic, crushed, peeled
1/2 cup vinegar
2-3 bay leaf
1 tbsp. crushed peppercorns
2-3 small hot green chili
2 tbsps. tomato paste
1-2 tsp. chili flakes

Cooking procedure:

In a medium size sauce pan put together all the ingredients except the coke. Add in about 2 1/2 to 3 cups of water. Bring to a boil and simmer at moderate to low heat for 20 to 30 minutes or until the pork are tender. Add more water as necessary. Add in the coca cola, hot chili, chili flakes and season with salt to taste. Continue to simmer for 8 to 10 minutes or until most of the liquid has evaporated and the pork start to render fats. Stirring continuously at the final stage of cooking to avoid burning. When done serve with a lot of rice.
