Chicken Breast is not a new recipe. Most likely you have already cooked
pansit sotanghon using your leftover lechon
manok. Most of my readers may not need this recipe but again for those who
are learning how to cook. This recipe will be a good guide.
There is nothing
new in cooking pansit.
Most versions are basically similar. Cooking pansit
involved sautéing the meat ingredients with garlic and onions. Then it is just
a matter of stirring in the other ingredients.
However cooking pansit is all about learning from your
mistake. You may not have the best pansit
during your initial attempts but you will learn to rectify your mistakes during
your succeeding attempts. Here is the recipe of my Pansit Sotanghon with Roast Chicken Breast. Good luck.
Ingredients:
1/2 kilo bihon
noodles
1 roast chicken
breast leftover, shereded
1 medium size
carrot, cut into thin strips
1/4 small size
cabbage, shredded
1 small sized
red bell pepper, cut into thin strips
1 small sized kinchay,
chopped
1 tbsp. patis,
fish sauce
2 tbsp. soy
sauce
2 small chicken
broth cubes
1 head garlic,
finely chopped
1 medium onion,
chopped
1/2 tsp.
powdered black pepper
cooking oil
salt
lemon slices
Cooking procedure:
Soak bihon
noodles for 15 to 20 minutes then drain, keep aside. In a large wok heat
generous amount of cooking oil, fry the garlic until color changes to light
brown and crisp. Remove half of the fried garlic and keep aside for garnishing.
Then add in the chopped onion, the kinchay, carrots, green beans and bell
pepper, stir fry for about half a minute remove from the wok and keep aside.
Using the same
wok add in about 1 to 1 1/2 cups of water and the chicken broth cubes stir and
let boil. Add in the soy sauce, fish sauce and powdered black pepper let simmer
for about 1 minute. Now add in the shredded chicken and the soaked noodles and
stir cook for 3 to 5 minutes. Correct saltines if required, Stir in fried
vegetables and shredded cabbage continue to stir fry for another 1 to 2
minutes. Serve with lemon slices.
