Inihaw na Talakitok sa Hotplate. Sometimes it is more convenient to grill a fish using your regular stove using hotplate. This will spare you of all the troubles of preparing your outdoor barbeque grill for just one serving of fish for the lunch or dinner. Be aware also that grilling fish indoors will trap all the smoke and fumes created in grilling fish indoors. Therefore I would suggest grill your fish only outdoors if your kitchen and stove do not have a working exhaust fan.

Today on our Inihaw na Talakitok sa Hotplate, I would like to share a no fail way of grilling fish in your regular stove using hotplate. You can use any type of stove either an electric or gas stove, in fact any type of stove as long as it can heat a hotplate.

The recipe of my Inihaw na Talakitok sa Hotplate is pretty much simple, in terms of seasoning and grilling. For seasoning and aromatic flavorings, I just rub the fish inside out with salt and pepper, drizzled some lemon juice and stuff the cavities with a couple of tanglad or lemongrass.

How I have mentioned that, I would like to share a no fail way of grilling fish in your regular stove using hotplate, here is the procedure. First off all you need to have banana leaves, if you are not in the Philippines, go visit your local Asian or Indian store you definitely need one for this recipe. The procedure is simple just wrap the seasoned fish with banana leaves, if you have enough of the banana leaves, wrap it in two layers. Now wrap the fish with aluminum foil, in two layer also, preferably using the technique used in steaming fish in aluminum foil.

Here is the recipe of my Inihaw na Talakitok sa Hotplate.

Ingredients:

Talakitok

1 large talakitok about 1 kilo or more
2-3 stalk lemon grass, trimmed, stem crushed
juice from 1 lemon
sall and pepper
banana leaves
aluminum foil
hotplate

Cooking procedure:

Remove gills and scales of the fish using a scissor cut pins and tail. Make some diagonal slit at both sides of the fish making sure that the slits are deep, up to the fishbone and all the way to the stomach to remove the innards. Wash fish including cavities and drain. Rub skin and cavities with generous amount of salt and pepper. Stuff in, the crushed lemongrass in the fish cavities. Drizzle the fish with the juice from the lemon on both sides. Now wrap the fish with 2 layers banana leaf then with 2 layers aluminum foil. Grill over hotplate for 15 to 20 minutes on each side at moderate to high heat. When done, turn of the heat and let stand for about 5 to 10 minutes, then unwrap and serve with dipping sauce mixture of soy sauce, kalamansi and siling labuyo.
