Ginisang Sotanghon with Sardinas. Canned sardines and noodles are the two Pinoy food that we never forget to buy whenever we visit an Asian or Pinoy Food Store while overseas, for the reasons that canned sardines are cheap, are easy to prepare, it can be eaten as vian as it is, straight from the can, and canned sardines are versatile that it can be cooked with anything.

On the other hand we buy noodles for the reason that we always crave pansit, we or most OFW cooked pansit on weekends, Sundays or Fridays, and then we invite our friend for get-together dinner or lunch. Or perhaps someone is celebrating his birthday, or the birthday of one of his or her kids back in the Philippines.

Sardinas, Upo at Sotanghon

Here is the recipe of my Ginisang Sotanghon with Sardinas.

Ingredients:

2 pack. 100gram sotanghon noodles soak with water drained
1 can 155gram canned sardines in tomato sauce, keep aside sauce
3-4 clove garlic, peeled, crushed, chopped
1 small size onion, peeled, chopped
1 small bunch pechay or bok choy, trimmed, chopped
1 small carrot, peeled, sliced thinly
1 small bunch, snow peas, trimmed
1/4 cup soy sauce
chopped parsley
salt and pepper
cooking oil

Cooking procedure:

Ginisang Sotanghon with Sardinas - Cooking Procedure

Heat generous amount of cooking oil in a wok or frying pan, then sauté the garlic and onion until fragrant. Add in all the vegetables and stir cook for about 1 minute or until half cooked, remove from wok and keep aside. Add more oil to the wok then add in the sotanghon noodles, soy sauce, the sardine sauce and about 1/2 to 2/3 cup of water. Stir cook the noodles for 2 to 3 minutes, season with salt and pepper to taste. Now add in the stir cooked vegetables and sardines, stir cook for about 1 to 2 minutes or until the noodles and vegetables are cooked. Serve immediately with rice.
