Giniling at Patatas Carinderia Style. My love to the Giniling goes all the way when I was still a student and when I was working in several companies in Manila. Giniling then would be a staple dish in in school canteen, office canteen and road side carinderia. Giniling is cheap, very yummy and goes a long way with rice. I still cook and enjoy the classic giniling.


Giniling at Patatas

The classic Giniling at Patatas Carinderia Style is made up of pork. Yes most of the time it is pork. Pork is cheaper than beef. It is cooked with tons of patatas or potato. Potato is the extender for the pork. That is why giniling is a carinderia specialty because of the cheaper ingredients. Instead of tomato sauce most carinderia giniling uses banana ketchup. Banana ketchup make the giniling sweet and nuclear red.

Don’t be intimidated with all the cheap ingredients Giniling at Patatas Carinderia Style is full of flavours. It is one of the Pinoy dish that we crave for while away from home or while overseas.

Giniling at Patatas Carinderia Style with Rice

To make our Giniling at Patatas Carinderia Style I have tried to stick to the usual ingredients akin to carinderia setting. I used banana kethup and tons of potatoes. But I have to use also some ingredients that we normally put to our home cooked giniling. Here is the recipe of my version of Giniling at Patatas Carinderia Style.

Ingredients:

1/2 kilo pork giniling
4-6 medium size potato, skinned, cut into small cubes
1 medium size carrot, skinned, cut into small cubes
1 small can cooked green peas
1 medium size red bell pepper, deseeded, cut into small squares
3-4 cloves garlic, peeled, crushed, chopped
1 medium size onion, peeled, chopped
1/2 cup banana ketchup
2 tbsp. tomato paste
1/4 cup cornstarch
1/4 cup soy sauce
1/4 cup fish sauce
1 tsp. cracked peppercorns
salt
cooking oil

Cooking Procedure:

Giniling at Patatas Carinderia Style - Cooking Procedure

In a medium size sauce pan sauté the garlic and onion until fragrant. Add in the pork gililing and stir cook for 2 to 3 minutes. Add in the fish sauce, soy sauce, cracked peppercorns and continue to stir cook for 2 to 3 minutes. Add in the banana ketchup and tomato paste. Continue to stir cook for 1 to 2 minutes. Add in about 2 to 3 cups of water. Bring to a boil and simmer for 2 to 3 minutes. Now add in the potatoes and carrots. Continue to simmer for 3 to 5 minutes or until the potatoes and carrots are just cooked. Correct saltines if required. Thicken sauce with cornstarch diluted in 1/4 cup of water. Add in the bell pepper and cooked green peas. Stir cook for another 1 to 2 minutes. Serve with a lot of rice.
