Crispy Pork Binagoongan
Crispy Pork Binagoongan. I was craving for fried pork the other day and decided to make Lechon Kawali from pork belly rashers. The problem was I ended, eating only couple of pieces and now I have a lot of left over Lechon Kawali. This time I thought, perhaps I could make a Crispy Pork Binagoongan from the left over Lechon Kawali, still unhealthy but how can you not be tempted with such sinfully delicious Pinoy food special.
Here is the recipe on how I cooked my Crispy Pork Binagoongan.
Ingredients:
1/2 kilo leftover Lechon Kawali, crispy fried pork rashers
1 small bundle string beans, trimmed, cut into 2” lengths, fried
1 bunch small eggplant, trimmed, slit lengthwise in half, fried
1 small size tomato, chopped
1 small size onion, peeled, chopped
1 green/red chili, sliced crosswise
1/2 cup bagoong alamang, cooked unsweetened
1 small cucumber, skinned, sliced crosswise
cooking oil
Cooking procedure:
In a wok stir fry the onion and tomato until soggy and wilted. Add in the chili and bagoong alamang, stir cook for another 2 to 3 minutes. Then add in the fried vegetables and fried pork, gently stir cook for 1 to 2 minutes until the bagoong alamang mixture has coated the vegetables and the pork. To serve arrange the sliced cucumber in the platter followed by the vegetables. Now chop the pork into serving pieces and place on top of the vegetables, serve with a lot of rice.
