Chicken Inasal, Mama Sita’s Inasal
Chicken Inasal, Mama Sita’s Inasal. This is a late post, this Chicken InasalRecipe was part of our inihaw New Year meal, together with the Pork Barbecue and Inihaw na Liempo that I have recently posted. Because of time constraint and inability of inasal marinade ingredients at that time, I end up using the ready mixed Mama Sita’s Inasal marinade in pouch for this recipe. There is nothing wrong using ready to used marinade mixes, I used them all the time. Ready to used BBQ and Grill mixes and marinades save a lot of time and money.
Here I made my Chicken Inasal, Mama Sita’s Inasal.
Ingredients:
1 kilo chicken legs with thigh, about 5 to 6 pieces
1 175ml pouch Mama Sitas Inasal Marinade
2 tablespoon margarine
1/4 cup atsuete/annatto in oil
1/4 cup cooking oil
Cooking procedure:
Slit open the chicken leg along the length to expose the bones. Marinate with the Mama Sita’s Inasal Marinade for at least 4 hours or overnight. Remove chicken from the marinade, keep aside. To prepare the basting liquid melt the margarine and mix the annatto in oil and keep aside. Grill chicken legs at medium to high heat for 8 to 10 minutes on each side. Baste with the prepared mixture in between. Do not overcook, it should be moist inside, just cooked and slightly burnt outside. Serve with vinegar and chilli or soy sauce with kalamasi and chilli dip.
