Chicken Feet Adobo with Tausi is very easy to make, do not worry about frying or sautéing. Remember with are cooking Adobo here.  The secret is to slow cook the chicken wings until the meat and tendons starts to fall off from the bones. It should be tangy and sourly salty.

Here is the recipe of my Chicken Feet Adobo with Tausi.

Ingredients:

1 kilo chicken feet
1/2 head garlic crushed, peeled, chopped
1 small onion, peeled, chopped
2 thumb size ginger, skinned, crushed
1/2 small can tausi, salted black beans, brine drained and rinsed
1/3 cup vinegar
1/4 cup dark soy sauce
1-2 tbsp. oyster sauce
1-2 tbsp. hoisin sauce
2-3 tbsp. brown sugar
2-3 pieces bay leaf
1/2-1 tbsp. crushed peppercorns
1/2 to 1 tbsp. chili flakes
salt

Cooking procedure:

Chop off nails and remove outer skin of each chicken foot. Wash thoroughly and drain. Put the chicken feet in a medium sized sauce pan, add in water up to about 1 to 2 inches above the chicken feet. Add in the garlic, onion, ginger, crushed peppercorns, bay leaf, chili flakes, vinegar soy sauce. Bring to a boil and simmer at low to moderate heat for 1 hour or until the remaining liquid is reduced to about half and the chicken feet are tender. Now add in the sugar, black beans, oyster sauce and hoisin sauce and continue to cook for another 15 to 30, stirring occasionally, until the meat and tendons starts to fall off from the bones and liquid turns to an oily sauce. Correct saltiness if required. Serve hot with a lot of rice.
