Beef Sopas, Beef Buto Buto
Beef Sopas, Beef Buto Buto. To most Pinoy beef buto-buto is the best ingredient for a Pinoy beef soup. We cooked beef bones in a variety of beef soup dish, these includes Beef Siningang, Beef Nilaga, Bulalo and the list goes on. Today I decided to make Beef Sopas out of beef soup bones. There should be no problem, beef bone and pasta will definitely result a Beef Sopas full of beefy flavors. Beef Sopas

For the pasta I decided to use penne pasta, instead of the regular elbow and shell pasta. Using penne pasta will trap more of the sopas goodies in the larger tube holes of the penne pasta.

Here is the recipe of my Beep Sopas using beef soup bones and penne pasta.

Ingredients:

1/2-1 kilo beef soup bones
250 grams penne pasta
1 cup mixed vegetables
2 cups, shredded cabbage
1/2 head garlic, peeled, crushed
1/2 head garlic, peeled, crushed, chopped
1 small size onion, peeled, quartered
1 medium size onion, peeled, chopped
1 small bundle, spring onion, trimmed, chopped
1/4 cup fish sauce
1 small can evaporated milk
1 tsp. peppercorns, crushed
salt and pepper
cooking oil

Cooking procedure:

Put the beef bones in a large pot, add enough water to beef bones to at least 1” above. Bring to a boil and let boil for 2 to 3 minutes, discard and drain first boil water, rinse the oxtail to remove scum. Add in enough fresh water to the pot to cover the beef bones to at least 2” above. Add in crushed garlic, quartered onion and peppercorns. Bring to a boil and simmer for 1 to 1 1/2 hours or until beef meat start to fall off from the bones. Add more water as necessary, remove scum that rises. When done separate the beef bones from the broth, using a sieve filter out residue and scum from the broth, keep aside. Using same pot sauté garlic and onion until fragrant, add in boiled beef bones and stir cook for a 1 to 2 minutes. Add in fish sauce stir cook for 1 to 2 minutes, now add in the reserved broth add more water as necessary. Bring to a boil, add in the macaroni pasta and simmer for 10 to 15 minutes or until al dente and stirring occasionally, add more water if required. Add in the mixed vegetables and continue to cook for 2 to 3 minutes, then add in the cabbage and continue to cook foe a minute. Season with salt and pepper to taste. When ready to serve add in the milk and garnish with spring onion.
