Sinigang na Alimango, Crab Sinigang
Sinigang na Alimango, Crab Sinigang. A stop at Resort World has now become a practice every time I passed by on my way from the airport to the Nichols entry of the Skyway, my route to home down South of Metro Manila. On my last trip home for this year’s Holiday Season we had a dinner at Red Crab the Alimango House restaurant at Resort world. Two of the crab dish that caught my attention was their Crab Sinigang sa Gabi at Kamias and Crab Sinigang sa Sampalok. We ordered Crab Sinigang sa Gabi at Kamias and it was truly great.
I immediately planned to cook one at home, since we had already the kamias version I have to try the sampalok version. Crab sinigang is not new to Overseas Pinoy Cooking, in fact I do have already an alimasag version of the dish, Sinigang na Sugpo at Alimasag, this time i used alimago.
Cooking is straight forward it is basically the same with any sinigang cooking method. You may also use your usual cooking method using your preferred vegetable ingredients. Here is the recipe of my Sinigang na Alimango, Crab Sinigang.
Ingredients:
1 kilo large crabs, alimango, pre-steamed
1 medium size radish,peeled, sliced crosswise
1 bundle kangkong, trimmed
2 medium size eggplant, sliced crosswise
6-8 pieces okra, sliced crosswise
2-3 large size tomato, cut into wedges
1-2 medium size onion, cut into wedges
3-5 pieces gabi roots, peeled, cut into small cubes
1 large packet sampalok sinigang mix
3-5 pieces green chili
1 small bundle leeks, cut into 2” length
salt to taste
Cooking procedure:
Cut the crab in halves, crack the shell of the crab claws but keep intack, set aside. In a large pot boil 5 to 8 cups of water or about half of the pot. Add in the gabi and simmer until it starts to disintegrate. Add in the tomato and onion and continue to simmer for 2 to 3 minutes. Add in the eggplant, radish and okra simmer for 2 to 3 minutes. Add in the crab and continue to simmer for 3 to 5 minutes.
Add in the sampalok sinigang mix in half a tbsp. at a time until preferred sourness is achieved, season with salt to taste. Add in the kangkong, green chili, leeks and cook for another 2 to 3 minutes. Serve hot.
