Pinoy Spaghetti with Sweet Longganisa
Pinoy Spaghetti with Sweet Longganisa. The Pinoy Spaghetti is unique, the sauce is a blend of sweet, sour and salty concoction of hotdog, ground meat, tomato sauce and banana ketchup. Every Pinoy kids love it. Now I would like to share a version using the equally loved and every Pinoys favorite sweet Pampaga’s longganisa. This is not the first time that I used longanisa with my spaghetti, a couple of years back I featured a Pinoy Spaghetti Longganisa which uses Vigan longganisa.
Cooking is fairly easy and is basically the same with any other spaghetti that uses the Pinoy tomato sauce. I could guarantee that this version of spaghetti is perfect for your Noche Buena or Media Noche table this coming Christmas Season’s home coming if your clan or family have a lot of children. You can also use your own spaghetti recipe and tweak it by adding the sweet longganisa.
Here is the recipe of my version of Pinoy Spaghetti with Sweet Longganisa.
Ingredient:
1 kilo spaghetti pasta, cooked as per package instruction
1/2 kilo Pampanga's longganisa, cut into four
2 250 grams packet Filipino style tomato sauce
150 grams shredded ham
1/2 head garlic, finely chopped
1 medium size onion, finely chopped
1 medium size carrot, finely diced
2 pcs small size red/green bell pepper, finely diced
1 large stalk celery, finely diced
2tbsp. sweet pickled relish
1/4 cup cornstarch
1/2 cup sweet chili sauce
salt and pepper
cooking oil grated
grated cheddar cheese
Cooking procedure:
In a large sauce pan saute onion, garlic and longganisa for 2 to 3 minutes. Add in shredded ham, tomato sauce and chilli sauce, stir cook for 1 to 2 minutes. Pour in 4 to 5 cups of water and bring to a boil and simmer for 3 to 5 minutes. Add in carrot and cover and simmer for another 8 to 10 minutes. Season with salt and pepper to taste. Now add in sweet pickled relish bell, pepper, celery and some grated cheddar cheese cook for another 2 to 3 minutes. Thicken sauce with cornstarch diluted in 1/4 cup of water, cook for another minute or until sauce has thicken. When done remove from heat. To serve place the cooked spaghetti in a platter pour on top the sauce and garnish with grated cheddar cheese.
