Kentucky Fried Chicken
Kentucky Fried Chicken. When I was a kid fried chicken means two things, fried chicken marinated with soy sauce and kalamansi or the savory fried chicken similar to the one served at Aristocrat or Max’s fried chicken. Today fried chicken means crispy breaded fried chicken. That is served at any of your favorite fast food restaurant. This has become the favorite of most Pinoys, not only for the kids but adults as well. The Pinoy version comes with the chicken gravy as a dip. The gravy has become a must for every fried chicken meal for Pinoys that it is even used as a sauce topping of the rice that comes along with meal. There is even a street food version that is coined as “Kantoky”, meaning KFC in street corner. Off course cooking this at home is not that difficult all you need is a lot of cooking oil and a deep fryer or deep pan. Here is how I cooked it.
Ingredients:
1 kilo marinated chicken drumstick or any choice cut
1 piece egg
1 cup fresh milk
2 cup all purpose flour
1/8 teaspoon baking powder
chili powder
garlic powder
salt and pepper
cooking oil
Cooking procedure:
Drain excess marinade of each chicken piece and place in paper towels so that excess marinade can drain off, keep aside. Beat egg and add in milk in a big bowl, in another big bowl, mix flour, baking powder, chili powder, garlic powder and season with salt and pepper to taste. Dip each chicken one piece at a time in the egg and milk mixture then coat with the dry flour mixture. Place the coated chicken on a platter until ready to fry. Deep fry the chicken, dropping one piece at a time and in batches for 12 to 15 minutes, or until golden brown at 250 to 300 deg. F. Turn over the chicken halfway for even cooking. Remove fried chicken and drain excess oil in a colander or paper towels. Serve with prepared chicken gravy.
Fried Chicken Gravy
Ingredients:
2-3 tbsp. cooking oil
1/4 cup of breading flour, use for breading the chicken
1/4 cup all purpose flour diluted in 2 cups water
1 piece chicken bullion cube
salt and pepper
Cooking procedure:
To make the roux, mix cooking oil and breading flour. Stir cook mixture in a small sauce pan over low heat for 5 to 10 minutes or until the color changes to brown. Now add the diluted flour and chicken cube, bring the mixture to a boil, stir cook for 3 to 5 minutes or until the mixture thickens, add more water as necessary. Season with salt and pepper to taste.

hi just want to ask about the gravy if what is mean 1/4 cup of breading flour, use for breading the chicken is this the mix flour baking powder, garlic powder and chili powder???
