Charlie Chan Chicken Pasta? Pinoy Style. A lot of friends are asking for a better recipe of Yellow Cab Pizza’s Charlie Chan Chicken Pasta. To be honest I am not really a fan of the Charlie Chan Chicken Pasta but because of the insistent request by friends, and for some reasons this pasta dish has hit most Pinoy. Also at one time Charlie Chan Chicken Pasta it is included in the dish served some of the party that you have attended. During these last several days I revisited our local Yellow Cab Pizza restaurant and tried to dissect the pasta dish. As I have stated above I am not a fan of the pasta dish for the reasons that it is swimming with oil, salty and I do not fancy peanuts in my noodles. To those who have not tried Charlie Chan Chicken Pasta, it is an acquired taste in addition to the above it also spicy.

Okey without further ado here is a very simple version of Yellow Cab Pizza’s Charlie Chan Chicken Pasta that I have created. Remember this is my first try but everyone thinks it is even better. For the ingredients I just used those popular bottled Lee Kum Kee sauces which is most likely available where ever you are. In addition I also used a good some peanut butter besides the roasted peanuts for an added nuttiness of the dish. One thing to remember should your tolerance to spicy food is less, then reduce the amount of the chili garlic sauce.

The roasted peanut may be omitted should you are not Fan of it as well. Here is the recipe of my version of Charlie Chan Chicken Pasta? Pinoy Style.

Ingredients:

I kilo spaghetti pasta, cooked al dente as per package instruction
4 pieces chicken breast, deboned, skinned discarded, cut into small pieces
10-12 pieces fresh shitake mushrooms, alternately use rehydrated shitake mushrooms, sliced thinly
1 large head garlic, chopped finely
1/3 cup Chinese barbecue sauce, Char Siu Sauce, Lee Cum Kee
4-6 tbsp. chili garlic sauce in oil, Chi Chow Chili oil, Lee Kum Kee
1 1/2-2 cups oyster sauce, Lee Kum Kee
1/3 cup peanut butter, diluted in 3/4 cups of water
1/2-1 cup unsalted roasted peanuts
1/2 to 3/4 cups of peanut oil or vegetable cooking oil
Spring onion for garnish

Cooking procedure:

Charlie Chan Chicken Pasta - Cooking Procedure

Place the chicken in a container with lid, mix in the Chinese barbecue sauce, replace the lid, refrigerate and let marinate for 4 hours or overnight. In a large wok heat the cooking oil until it start to smoke. Stir cook the garlic until fragrant. Add in the marinated chicken and stir cook at high heat for 5 to 8 minutes or until the chicken start to sizzle. Add in the Add in the chili garlic sauce and continue to stir cook for 1 to 2 minutes. Add in the oyster sauce, diluted peanut butter, roasted peanuts and the shitake mushroom, continue to stir cook for another 5 to 8 minutes. Now stir in the cooked pasta noodles and stir cooked for 2 to 3 minutes or until the pasta noodles are evenly coated with the sauce. Serve hot garnished with cut or chopped spring onions.
