Suam nga Karabasa, Kalabasa Soup
Suam nga Karabasa, Kalabasa Soup, here is a comfort food from my childhood I will never forget. Suam nga karabasa was then a regular dish when I was a kid, in fact I also did cooked it my self. That version was cooked with thick consistency for the reason that it was supposed to be a viand not as a soup, never the less it was still called suam. On this recipe I have tweaked a little bit I made it as a chunky soup. This version is probably not new to some, suam is versatile in its own it can be cooked on any consistency of your preference or can be topped with any leafy vegetable tops available at your garden…
Ingredients:
1 k. kalabasa (squash), seeded, cut into small cubes
1 cup pork, parboiled, cut into strips
1/2 cup hibe (dried shrimp), soak in water and drained
1/2 head garlic, chopped
1 medium size onion, chopped
1 big size tomato, chopped
2-3 stalks spring onions, chopped
1/2 cup patis
cooking oil
Cooking procedure:
In a sauce pan, sauté garlic, onion and tomato. Add pork and dried shrimp, stir cook for 2-3 minutes. Add in patis and stir cook for another 2-3 minutes. Add 10-12 cups of stock or water let boil, add in kalabasa and simmer for another 30-45 minutes or until kalabasa crumble into chunky thick yellow soup. Season with salt if necessary and add in spring onion, cook for another 1-2 minutes. Serve immediately.
