Pansit Lomi
Pansit Lomi is another Pinoy merienda favorite. It is most likely listed on restaurant and room service menus along side other noodles or soup dish. You won’t fail to see this dish at fast-food food court that serves Chinese food. Of course it is my favorite merienda and breakfast as well. Here is a quick method of preparing this dish using Lucky Me instant lomi noodle.
I am sure you won’t find any problem since instant noodles are readily available at Asian section of most supermarkets. If the lomi noodle is not available you could always use the regular yellow instant noodles, shrimp or chicken flavors.
Ingredients:
2 pkt. pansit lomi instant noodles
1/2 c. pork, boiled, cut into strips
2 bulbs, garlic, minced
1/2 small size onion, sliced thinly
1/2 c. carrot, cut into strips
1 c. cabbage, shredded
2-3 stalk wansoy, chopped
2 medium size egg, beaten
2 tbsp. patis
salt and pepper
Cooking procedure:
In a deep pan sauté garlic and onion, add pork and patis, stir cook until meat turn to golden brown. Pour in 6 cuo of water and bring to a boil. Add lomi noodles including seasoning mix and simmer for 10 to 15 minutes or until lomi noodles are soft and broth thickens. Add vegetables and wansoy, cook for another 2 to 3 minutes. Season with salt and pepper. Pour in the beaten egg in a thin stream, stirring continuously. Cook for another minute. Serve hot.
